Most people don't know that back in 1912.  Best Food's mayonnaise was manufactured in England.  In fact, the Titanic was carrying 12,000 jars of the condinment scheduled for delivery in Vera Cruz, Mexico, which was to be the next port of call for the great ship after it's stop in New York.

This would have been the largest single shipment of mayonaise ever delivered to Mexico.  But as we know, the great ship did not make it to Mexico.  It sank smashing into an iceberg.

The people of Mexico, who were crazy about mayonaise, and were eargerly awaiting it's delivery, were disconsolate at the loss.  Thier anquish was so great, that they declared a National Day of Mourning, which they still observe to this day.

The National Day of Mourning occurs each year on May 5th and is known of course, as Sinko De Mayo.

Back in the day of steamships, rather than using wood to burn (as it was too heavy and the weight caused ships to sit too low in the water) they used Cow Chips. 

The storage of the Cow Chips in the lower levels exposed them to the salt water, and they would spontaneously combust causing fires on the bottom of the ships.

To rectify the problem, these Cow Chips were stored in crates marked "Store High In Transit".  So when the crew needed the crates of Cow Chips, they would just yell they need more S**T.  And that folks is how the accronym came to be.
